Black garlic is a functional food made from fresh garlic (Allium sativum L.) by fermenting whole bulbs or peeled cloves in a room with a specified temperature (60-90°C) and humidity (70-90%) regulated for time.
Compared to fresh garlic,after fermentation,it looks black and does not release a strong pungent flavor due to the reduced allicin content. It contains many antioxidant compounds such as polyphenols, flavonoids, tetrahydro-β-carboline derivatives and organic sulfur compounds, including S-allyl-cysteine and S- Allyl-mercaptocysteine.
Fermentation not only changed the nutritional composition and sensory characteristics, but also enhanced its biological activity.
